Mmmm cupcakes!

In lieu of going to the gym today, I decided to stay home and bake cupcakes with my girls. A little counterproductive I suppose. But oh well, it's not like I'm losing any weight anyway!! I haven't baked in a very long time in trying to cut out all sweets, and I still managed to gain weight. So why not bake anyway?! Besides, in five short weeks Valerie and Veronica will start summer camp, so I will have two whole days to myself for the first time in nearly six years. In August it jumps to three days a week.... so I guess if I want to spend three hours at the gym then I will. For now, I've been trying to come up with fun things to do with my girls while they are home with me. I want them to remember all the fun things Mom did when they were little. Plus, keeping them occupied keeps me sane as there are fewer meltdowns. I <3 being a stay at home mom, but it can be a little trying at times. I guiltily admit that I have a To Do list started for when they are in school!!

Anyway, back to the cupcakes! I used a super easy recipe from All Recipes.com. I've made it before and it is a winner! It made 14 cupcakes for me.

1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.

In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
