The cookie cake challenge

I'm sure my kids aren't the only ones, but my girls plan their birthday parties months in advance.  Some of the ideas stick and some of them are quickly forgotten.  Valerie had hear heart set on a  double layer Hello Kitty cookie cake from Sam's this year.  We've gotten a few cookie cakes from Sam's and I have to admit, I like them too.   It's less than $20 for a huge double layer cookie cake and that is a deal!  I have made every single birthday cake through the years, so ordering one would be a first.

A few weeks ago we were going to Sam's, so we stopped by the bakery to flip through the cake book.  Then I saw it.  On the price list next to cookie cakes, it says "will return in January."

What...?  You have got to be kidding me.

I asked the lady taking orders if cookie cakes were not available anymore?  Nope.  Not available until January.  My ValGal's eyes filled with tears and she cried as we walked around the store.  That was what she really wanted, she said.  Sigh.

I know I could have gone to 'that place in the mall.'  For $60 I could have gotten a double doozie cake.  I like them too, but I would rather not spend that much on a cake.  Remember:  I'm a baker and I have never paid for a cake!!

So I did what I normally would have done -- I baked her cake myself!  I used cake mix as a base in a chocolate chip cookie bar recipe.  I made two layers and viola - cookie cake!  For good measure I made some extra cupcakes too.
