Roux in the.... microwave?

So many Cajun recipes start with "first you make a roux."  If you've never made one before, I can see how it would be intimidating.  It's not hard, but it takes time.  Basically it involves constantly stirring flour and oil in a pot for a good 45 minutes to an hour.  If you're not careful, it will burn rather easily.  While I appreciate the outcome of a good gumbo or stew, I don't always have the time or energy to stand in front of the stove for that long.  

Enter:  microwave roux

Now, all the old Cajun Mawmaws and Pawpaws would beat you with a stick if you mentioned making a roux in the microwave.  Shhhh if you don't tell, I won't tell either!  

And I admit... I was so skeptical....   but it worked and was so darn easy I don't know if I'll ever stand for an hour at the stove again.  




Microwave Roux in about 15 minutes

8 cup Pyrex (or similar heat resistant) glass measuring cup (a glass bowl will probably do if you don't have a glass cup)

a whisk

1 cup flour

1 cup oil 

Whisk the oil and flour together in the measuring cup.  Microwave for 5 minutes, stopping half way through to whisk well.

Microwave for another 5 minutes. Whisk 3 more times during this 5 minutes, so approximately every 1-1/2 minutes. 

Microwave 3 more minutes, stopping to whisk once every minute.  

Microwave 30 seconds, whisk.  Repeat for another one or two rounds of 30 seconds until your roux is dark enough.  (This makes a dark roux, but can also stop sooner if you want a lighter roux.) 

That's IT.  Takes about 15 minutes total.  Your glass cup will be HOT as fire so be careful!!

  1. I'll have to save this. Not sure what I'll make with it but always good to know it can be done in the microwave! (honestly, I've never made anything with roux before, but you never know....)
